New Thanksgiving Day Menu Item...

Last week I was in PUMPKIN mode!  (I have no idea why.. I am not really a pumpkin fan!)  I made this Pumkin Penne which I was planning on posting on this blog... but I wasn't a fan.  If you are dying for the recipe I will post it... let me know.

Anyways, I had leftover pumpkin after making that (where can you find a 15 oz. can of pumpkin!?) so I was searching for a recipe that would use it up.  I came across this:


Pumpkin Gingerbread Streusel Cake

IT IS FABULOUS!!!

You can find the recipe HERE.  However I would STRONGLY recommend changing the recipe slightly!

INSTEAD of 1 T. pumpkin pie spice--- only use 1 t.
(I did this on accident the first time and then when I actually followed the recipe... I didn't like it as much!...yes I made it twice already...)

Instead of using whipping cream for the caramel use half and half!
I know.. sounds crazy, but trust me on this one!  When you do it this way the carmel seeps into the cake making it all yummy and gooey.  (I didn't have whipping cream when I made my caramel...)

Enjoy!  My sister tried this and declared it a MUST for Thanksgiving from now on.  I know you are probably done with pumpkin right now too, but if you have some leftover pumpkin pie filling here is a yummy recipe to use it on.
